A green tea from Japan aged in a snow covered hut? What is this wizardry? Turns out the Japanese tea company Seikoen has been up to something quite unique. They've been storing tea in Niigata. Within their snow covered huts (yukimuro) are stored the sencha leaves. Hovering at a near freezing temperature, the leaves increase in amino acids. This increase has an amazing effect of the taste and flavour of the tea. Who would have thought! Get in on it while you can.
